Our version of a Paloma uses agave from fellow B Corp Hilltop and our Cask Rested gin instead of tequila. The cask ageing process adds unique spices and citrus notes, making it the perfect match for a twist on a classic.

Ingredients

  • 40ml The Botanist Islay Cask Rested Gin
  • 25ml Grapefruit juice
  • 10ml Lime
  • 10ml Hilltop agave
  • DASH water grapefruit soda
  • Sea salt and grapefruit wedge

Method

  1. Rim half the glass with sea salt
  2. Add all ingredients, except soda, to a highball glass and stir
  3. Fill with ice and top with grapefruit soda
  4. Garnish with a grapefruit wedge
